What food should I store? Store
food with great nutritional value and great taste. Store food
that is easily accessable to you. Also, store food that does not
require large amounts of space. Thus, dehydrated food is an
excellent choice. Freeze dry dehydrated food is to be preferred
because of the higher quality and nutritional content.
I consider wheat
the best grain to store because of it's
nutritional value and ease of storage. Wheat provides almost
all the nutritional needs of a person.
Geri Guidetti writes the following in the excellent
book, Living Well on Wheat :
"Of the 44 known naturally
occurring food nutrients essential to humans, only 4 are lacking or at
very low levels in the whole wheat berry. These four -- vitamins
A, B12, and C, as well as the mineral, iodine -- must
be obtained from other sources. However, a typical analysis
of the edible wheat grass of sprouted wheat shows that 3 servings of greens
contain 91% of U.S. recommended daily intake (RDI) of Vitamin A (as beta-carotene),
53% of the RDI for Vitamin C and 50% of the RDI for Vitamin B12,
so three of those four deficiencies can be compensated for by sprouting
the wheat to serve as fresh greens."
However, a person should, also, have some
barley, rye, flax, rice and some of the other
grains for variety.
Wheat and the various grains can be stored
for long, long periods of time when properly packed.
My priority in foodstorage is, first Wheat
sufficient to feed all members of one's family for a year if possible.
Then the next most important item to purchase
is a hand grain grinder which is reasonable priced and will grind most
grains.
